Instructions

Step 1 – Flip that’s amazing pickled red onion

  • Slice up some ⅓ red onion into thin slivers
  • Take a container and pour in some Funky Ouma olive oil
  • Add a good dash of vinegar and lemon juice, you want the mixture to have a good acidic kick
  • Throw in a pinch of sugar, seal and shake the container to mix
  • Pop your red onion into the mixture and coat evenly
  • Set it to one side, the longer you leave it, the better it gets
  • If you have time, do this before you leave for work in the morning and set aside at room temperature for the day

Step 2 – Banging fish

  • Pre-heat your oven to 180 degrees.
  • Cut the hake fillets into small cubes (roughly 1 – 2cm in length and width)
  • Take 3 shallow dishes
  • Dish 1: Flour
  • Dish 2: Whisked egg
  • Dish 3: Mixture of bread crumbs and Cajun spice rub
  • Evenly coat the hake cubes in flour, then dip into the egg mixture and finally coat with the bread crumbs to form a crust around the fish
  • Pop the fish onto a non-stick baking tray and place them in the oven for 7 min

Step 3 – Sexy salsa

  • While the fish is baking, smash up an avo
  • Finely cut up the coriander and dice the ripe tomatoes
  • Chop up the chilli and remove the seeds if you want less ring sting in the morning
  • Squeeze in some lemon juice

Step 4 – Banging fish & smash in your face tacos

  • Heat up a frying pan with a generous amount of olive oil
  • Once hot, remove the fish from the oven and pop them in the pan to shallow fry
  • Turn the fish as it cooks, but be gentle to avoid breaking it up
  • Once golden brown, remove and allow excess oil to drain
  • Pop the tacos into the oven to warm through for a minute or two
  • (You can skip the oven baking of the fish and shallow fry it as detailed above, but popping them in the oven will result in better cooked fish)

Step 5 – Serve

  • Remove the pickled onions from the mixture
  • Cut the tacos into halves or quarters for smaller portions.
  • Whack on some cream cheese
  • Add a dollop of sexy salsa
  • And a couple of pickled onions
  • Top it off with the banging fish
  • Crack open a cold beer and enjoy, you deserve it.
