Cape Fish’s hot smoked salmon quiche
If you’re anything like us, lockdown will have inspired invention in the kitchen. Since we suddenly have no option to eat out, menu planning and creating different dishes is a distracting (and delicious) activity. That’s why we recommend our mouth-watering hot smoked salmon quiche recipe for your next cook up!
We understand that cooking quiche might sound intimidating, but our recipe is fool proof and especially easily tackled with a glass of wine in hand! You can also play around with the fillings to find your perfect blend of flavours – it’s very hard to go wrong here.
Ingredients to serve 4 to 6 people
- Cape Fish hot smoked salmon (250g)
- ½ cup self-raising flour
- ½ cup grated cheddar cheese (mild, medium or strong – your choice)
- ½ cup butter
- 250ml cream
- 4 eggs
- 4 large leeks, chopped
- 1 red onion, finely diced
- 1 small pack of sundried tomatoes, chopped
Method:
Step 1 – Pastry & Prep
- Preheat the oven to 180 degrees
- In a bowl, combine the self-raising flour, butter (room temperature, cut into chunks) and cheese
- Mix to form a ball of pastry
- Place the pastry in the fridge to firm up
Step 3 – Quiche filling
- Chop the leeks and onions, then fry with some butter until soft and caramelised
Step 4 – Quiche
- Separate the eggs and beat the egg whites until stiff
- Combine the egg yolks and cream with salt and pepper to season, and beat until well mixed
- Gently fold the egg yolk mixture into the whites
Step 5 – Bring it all together
- Roll out the pasty to fit into the bottom of the quiche dish
- Evenly distribute the onions, leeks and sundried tomatoes onto the quiche base
- Break up the hot smoked salmon with your hands and scatter evenly onto the leeks and tomatoes
- Gently pour in the egg mixture
- Bake for 30 – 35 minutes at 180 degrees
- Check to see if it is cooked by inserting a knife. It should come out cleanly with no residue, if this is not the case then return to the oven for 5 minutes and check again
Serve with a side salad of your choice and a glass of crisp white wine
